Quinoa-Eggplant Casserole

I had a great day today! I didn’t end up going to the body sculpt class. My roommate was feeling sick and wanted to rest and I prefer to go to classes with other people so I did my Bikini Ready Fast DVD at home.

After that I headed out shopping with my roommate. We stopped by Blue Sky bakery and I got a delicious blueberry muffin.

That’s the half I didn’t eat that’s left over for tomorrow.

We stopped by Target and I got sports bras and some other necessities. Then we did some wandering around Brooklyn and ended at Trader Joe’s where I bought some essentials.

For dinner tonight I made a casserole, a quinoa-eggplant casserole.

It’s delicious. Here’s the recipe:

I rinsed and covered 1 medium eggplant and 1 small eggplant with salt to get the bitterness and some of the liquid out for about an hour. Then I cooked 1 cup of quinoa in 2 cups of water.

I cut cup a head of broccoli and about 2/3 of a large head of cauliflower. I put the eggplant, broccoli, and cauliflower in a casserole pan and mixed it all together. Then I added the quinoa, 2 cups of Trader Joe’s tomato sauce, and a cup of part-skim mozzarella and mixed it all around. Then I baked it for about 40 mins at 375*.

I have a bit of a tummy ache now.

I was going to have some of these delicious sea salt brownies I bought at Trader Joe’s but I think I should take it easy on my stomach.

Oh and I’m having an apple and beer now. I got the last two loose bottles of Brooklyn Pennant Ale.

All-in-all a great weekend and a good night. And only 20 more minutes until Mad Men!

*** Edit the next day. Remember to rinse the quinoa before cooking, I forgot to do this and the results for my stomach were not fun. And upon eating more casserole I think I should have parboiled or briefly steamed the veggies (not the eggplant). Next time I will do this and of course report back.

A Flash Flood

I’m pretty sure I experienced a flash flood this evening on my way back from the gym. It was raining pretty hard and the corners where I had to cross the street had about a few inches of water and it was building up quickly. At first I tried to leap over the puddles but at the end I was just walking through them. I passed a motorcycle that had half its wheels under water. It was also scary because Park Slope is actually sloped and the rushing water was really rushing!

But let’s rewind. My parents and aunt came to have brunch today. They were supposed to be here at 11:30 so when I woke up at 8:30 I had 3/4 of a cup of plain Puffins and an apple. But they didn’t get here until 12:30 and I was starving! We went to Perch which is one of my favorite brunch places. Since it was prime brunch time we had to wait a while to be seated so I was really starving by the time we ordered. I had a mint tea, ginger mint lemonade, egg sandwich with jalepenos, onions, and cheddar, and grits (which I didn’t really like). The sandwich was SO good.

I walked around with them for a while after that and then said goodbye. I did some work on the blog this afternoon. Check out the recipes page and the important posts page.

While doing that I looked at some past posts and came across the history of my pickiness. In it I said two of the foods that I never liked but I wanted to learn to like were yogurt and eggs. Well, mission accomplished! I’m now addicted to Greek yogurt and I’ve had eggs several times and enjoyed them in a few different forms. Also on the list was Asian food and if you count the dumplings I had and loved at the Vendys I’ve done 3 out of 4!

I went to the gym tonight. I did the treadmill again this time 2 mins of level 6 at a 2.0 incline alternating with 1 min of level 6.5 at the same incline. I did that for about 20 minutes, walked and then did it again for one time, walked, and then did it again until I reached 3.1 miles at about 32 minutes. I even ran the last 2 minutes at 6.5. I think it’s more of a mental thing for me than a physical thing.

After the treadmill I did the upright bike for 20 mins, some ab work, stretched, and braved the flash floods.

For dinner I had the same thing as last night except an apple instead of a banana.

My roommates and I all stayed in tonight and we watched Two Weeks Notice together. It was really fun.

I’m going to a body scupt class at the Y tomorrow morning. Wish me luck!

A Grumpy Gus

I was a grumpy gus today. I just woke up on the wrong side of the bed. I think the lack of sleep the night before, the cucumber debacle, and the stress at work finally got to me. I wasn’t feeling the No More Trouble Zones circuits I did this morning or really anything else.

I had my pineapple Chobani and Kashi Go Lean for breakfast. For lunch I had a grill chicken cobb wrap from this sandwich place, it wasn’t very good. I had it once before and they diced everything like an actual cobb, but not this time. Kind of sucked.

I got home and hung out for a little while and then went to the gym. I stopped about halfway through to stretch because my legs felt really tight and then the treadmill erased my progress so I’m not really sure of my total time. I mostly did 2 minutes of running at 6.0 with a 3.0 incline and then 1 minute of running at a 6.5 pace with a 3.0 incline. I think I did it for about 30 minutes with a few walking breaks. And I watched Jeopardy while running 🙂

After the treadmill I did the Stairmaster for 20 minutes! I thought I was going to die. I was on a level 6 which was really challenging. I’ve never been so sweaty in my entire life. It was fantastic.

After the gym I came home and had some dinner.

The cupcake is a pumpkin cupcake that one of my friends from work made. It was so good. And I love candy corn, it’s so gross, but I have to buy a bag once during Halloween season!

I just watched last night’s Office and I’m about to watch 30 Rock. And then it’s off to bed. I have a pretty lame life for a 24 year old but I like it!

It’s 8:20 and I’m quite literally falling asleep while watching TV. I don’t know if I’m going to make it through The Office and 30 Rock!

I slept terribly last night. One of my roommates had issues getting in (like literally opening the door) last night and the commotion woke me up at 1am and I had trouble falling back asleep. Then there was more commotion at 5am and it woke me up and I couldn’t fall back asleep for the last 45 minutes of my normal sleep.

There was this awful smell in my apartment this morning, like something was dying. Then, when I was making my lunch, I found a bag of moldy, leaking cucumbers on our counter. I don’t like cucumbers so they didn’t belong to me. But that seemed to be the source of the smell so I threw them out and scrubbed the counter. Unfortunately it still smells (although not as bad) so I made a baking soda bath and hopefully that will help.

Work today was more insanity, skiping over that.

I hadn’t planned on going to the gym tonight because I had to pick up my laundry before 7pm and I also wanted to give my body a break (although I did weights this morning). But then when work was so crazy I thought maybe I should go to the gym and work out some aggression, but ultimately I decided I was too tired.

For dinner tonight I had the little bit of chili that was left over sweet potato fries with cheese

It was delicious. I also had some steamed broccoli and garlic hummus with whole wheat mini pitas. It was a lot of food, my judgment is a little off.

It’s now 8:48 and I’ve turned off the television and I’m going to sleep. Yes, I am 24 going on 90.

Measuring Up

I had another great workout at the gym tonight. I did the treadmill and I decided I’d do kind of my own version of interval training. I did:

1 minute walking 3.5 pace with 3.0 incline
1 minute walking 4.0 pace with 3.0 incline
2 minutes running 6.0 pace with 3.0 incline
1 minute running 6.5 pace with 3.0 incline
2 minutes running 6.0 pace with a 3.0 incline
1 minute running 6.5 pace with 3.0 incline
2 minutes running 6.0 pace with 3.0 incline
1 minute running 6.5 pace with 3.0 incline
2 minutes running 6.0 pace with a 3.0 incline
3 minutes walking 4.0 pace with 3.0 incline
2 minutes running 6.0 pace with 3.0 incline
2 minutes running 6.5 pace with 3.0 incline
2 minutes walking 4.0 pace with a 3.0 incline
3 minutes running 6.0 pace with a 3.0 incline
1 minute walking at 4.0 pace with 3.0 incline
1 minute walking 3.5 pace with a 3.0 incline

Overall I really liked it. It was very challenging not so much for my lungs but for my legs and butt. I think the bike, Jillian DVD, and the Stairmaster have all really done a number on my thighs and my butt. But it felt good to push through.

After the treadmill I did 10 minutes on the sitting bike at level 12. Then I wanted to do abs and stretch but the mats were all taken so I decided to just walk home and do abs and stretch at home.

I was trying to think of something to post tonight. I’ve been eating the same food (chili for 2 out of 3 meals) and the other one isn’t interesting. And then I remembered a post I saw this morning on Shedding It and Getting It about tape measures. This reminded me that I had taken my measurements before I did the 30 Day Shred and I had never posted or updated them.

When I finished the 30 Day Shred I was kind of annoyed that I hadn’t lost weight and my inches lost weren’t that impressive either. But tonight I thought I’d get out my handy tape measure and see how things compared.

All in inches, obviously. (I made this chart in Excel and it was like being at work since all I’ve been doing is working on Excel spreadsheets.)

I’m especially happy with my hips because that’s a bad area for me and it’s one that I never really feel any burn in when I’m doing ab work.

This is kind of going to be a mish-mosh post, just so you know in advance.

I woke up this morning and killed it with No More Trouble Zones biceps and butt and chest and triceps. I fully plan on killing it tomorrow either with the core workouts or back to the first 2 workouts. I’m worried the core stuff might have a lot of jumping which disturbs the downstairs neighbors.

Work, bah, we’ll just skip through that. Let’s just say there’s a lot of discontent from a lot of people on a lot of different fronts and it feels weird to be one of the “happier” ones. I really do like my new job, even though it can be a pain in the ass. And I’m still doing my other job for the time being.

I did try a new flavor of Emergen-C this morning: orange. I think it looks like Tang.

Although, I admit, I’ve only had Tang once, but I feel I can still say it looks like Tang (and maybe tastes like Tang?) since Tang is so famous.

Let’s skip back to breakfast for a second, I had planned on having oatmeal but those beans last night did a number on my stomach so I decided to go for a multigrain English muffin with white chocolate peanut butter and a banana.

Work, work, work.

Then I went to the gym!

The guy told me to smile, but I hate that fake smile so I kind of did the George Bush smirk. Then he yelled at me (in a joking way) and I told him I had a long day at work and I couldn’t smile because I had to go work off aggression. Then I’m pretty sure he thought I was insane. Well, actually he told me right where the punching bag is located!

The gym was fab. I was really worried it would be packed since I went right after work but I had no problem getting a treadmill. I did 18 minutes of running at a 6.0 pace and 3.0 incline and then another 10 minutes of walking at a 4.0 pace and 3.0 incline. I’d obviously like to be able to run the entire time but my body is still getting back from the plague.

After the treadmill I wanted to do the Stairmaster. I had always seen Stairmasters that looked like this:

Once I figured out how to hurl myself onto it (just hurl) it was great. I did 10 minutes of the “fat burn” workout at a level 5. I thought level 5 was a bit easy, but I didn’t want to push myself too hard the first time. And I was sweating my ass off. There was a puddle of sweat that accumulated at the base (sorry, too much to share?).

I got home from the gym I watched some TV, stretched my ankles, warmed up some chili, and watched the Biggest Loser. I wish I could watch that show without crying but it gets me every time,

I also had some wine. Isn’t this label great?

And I just noticed that it says it’s sustainably farmed! Too bad it doesn’t taste better. (I do not recommend buying this.)

Two random things.

FIRST: I had the realization today that when I reach my goal of weighing less than 150lbs when I go to the doctor and they weigh me they won’t have to put the bigger weighted part on “150,” they can put it on “100” and use the smaller part! That thought really made my day.

SECOND: Remember when I had the plague and I said I was going to blow up the air mattress rather than sleep in the bed at my parents’ house? Well, I did it:

There were many things about today that I wasn’t feeling:

– The wait for the R train and the packed R and N trains this morning
– The fact that Bookscan (Neilsen ratings for books) wasn’t up therefore preventing me from doing my job.
– The fact that 2 days before 2 major sales calls we discovered that the girl who had my new job before me totally screwed up and didn’t do the things she said she did.
– The fallout from her negligence that had me running around like a lunatic today.
– The incompetence of one of our IT guys who twice came over to fix my computer, spent about 30 mins on it each time (as I was panicked and dying to do work) and made it worse both times.
– The packed F train on my way to TJ’s
– The incredibly lengthy lines at Trader Joe’s
– The fact that my Blackberry isn’t receiving email.

But let’s not focus on the negative, let’s go to the positive.

I woke up early and did two circuits from No More Trouble Zones. Today was shoulders and legs and chest and abs and I am FEELING IT. Tomorrow I’m going to do biceps and butt and chest and triceps.

I had a wonderful breakfast of pineapple Chobani. And I got great produce at the Greenmarket.

My free burrito (one of my friends from work won 10 free burritos by putting her business card in their “fishbowl”) was delicious and everyone loved my chocolate chip cookies.

After the bad IT guy broke my computer the nice IT guy (bad IT guy’s boss) came and helped me even though it isn’t really his job and he didn’t know what he was doing. BUT HE FIXED IT! All he had to do was click one box. So easy! So not worth all the frustration!

And because the day was so crazy busy time just flew by.

Then I got home and I made chili. For a long, long, long time I’ve been searching for a vegetarian chili without soy or other fake meat. Yesterday I finally found one from Cooking Light that I thought looked good.

I got a single beer from Trader Joe’s to make my day a bit better.

I also bought some holiday tea. I didn’t realize when I bought this that it was vanilla and cinnamon too, but I really like it (despite it smelling like an air freshener).  And the package is so cute. I love the holidays!

Then I cut up a massive amount of onions. I love onions. There is probably no one on earth that loves onions as much as I love onions.

Unfortunately I couldn’t just eat onions, I had to add some yellow and green bell peppers to the mix.

Here it is all cook, cook, cooking away. The only changes I made from the recipe was to use cannelli beans instead of pinto because TJ’s didn’t have pinto beans and I just used diced tomatoes in their juices instead of stewed tomatoes because I wasn’t sure what stewed tomatoes were and there were no cans labeled “stewed” at TJ’s.

I also took the liberty of adding some raw onion (yes, now you all know why I’m single), some jalapeno, and some cheddar cheese to the chili.

I also crushed up some “reduced guilt” tortilla chips. TJ’s really knows how to market their stuff. I would never have bought something labeled “reduced fat,” but reduced guilt sounds so cute! And the ingredients were all real food and easily identifiable.

Here’s the finished meal. I ended up taking some of the jalapenos out because even for a girl that loves spicy it was a bit much.

Yummmmmmm. And there are about a million leftovers.

My other exciting news is that I joined The Nutritionista in her Winter Shape Up Challenge. Here’s my goal:

My overall goal is to weigh below 150lbs by the end of the year. My goal for this week is a fitness goal. I want to do a strength training session each morning before work.

Seems attainable, right? Which brings me to my last piece of good news. When I weighed myself this morning I weighed 161.6lbs. That’s pretty much the lowest number I ever remember seeing on a scale (on which I was standing). And it’s a net weight loss of 29.8lbs since April! Pretty damn cool.
